Traditional Shan Tofu by Chef Thein

It’s fast and easy to make. It’s high in protein & fibre and low in calories.

Traditional Shan Tofu is very famous and most popular food in Myanmar which is originally from one of the state in Myanmar called Shan State. Shan tofu is can be eaten as fresh, deep fried, salad or curry.

Ingredients:

  1. Chickpea flour 200 g
  2. Water 7.6 ltr
  3. Palm sugar 25 g
  4. Salt 1/2 tbsp.
  5. Turmeric powder 1/2 tbsp.

Preparation:

First, place 200 g of chickpea flour in a clean cotton bag and add 1 ltr of water in it. Slowly squeeze the cotton bag until all the peas puree come out. Once almost all the peas puree come out, keep peas puree in a separate container.

Add another 1 ltr of water into the cotton bag and squeeze slowly and gently to clean all the peas puree from the bag. Once it’s done keep all the peas puree in a same container and add 5 ltr of water in it and keep the container for one night in the chiller.

After one night, throw all the water from the top and keep the peas puree on the base.

Place one pot on the stove with 0.6 ltr of water, 25 g of palm sugar, 1/2 tbsp. of salt and 1/2 tbsp. of turmeric powder.

When the mixture is start boiling, pour the Peas puree one side and stir one side continuously. Keep the heat in medium and cook until peas puree become thick about 7 to 10 mins.

When Peas purees is become thick, transfer it to the tray and let it cool down for few hours. After peas puree is cool down, Myanmar Traditional Shan tofu is ready to serve. You can hear as you like deep fried, salad or curry.

Ingredients for Traditional Shan tofu salad:

  1. Garlic oil 1 tbsp.
  2. Sesame oil 1 tbsp.
  3. Fresh garlic water 1 tbsp.
  4. Coriander leave 1 tbsp.
  5. Fried chilli 1tsp
  6. Vinegar 1tbsp
  7. Soy sauce 1tbsp
  8. Sweet soy sauce 1/2 tbsp.
  9. Mix all the ingredients and pour on top of the slice tofu.
